If you couldn’t tell by reading this column, I love quick and easy meals to feed my family. After working a 9-hour shift I just don’t have the time/energy to put together dinner.
Enter the “Lazy Lasagna”: layers of frozen ravioli, sauce, meat, and cheese. Five minutes to put together, add some garlic bread and a side salad, and dinner is done.
Lazy Chicken Alfredo Lasagna
Recipe adapted from Iowa Girl Eats “Lazy Girl’s Ravioli Lasagna”
2 15 oz. jars Alfredo sauce
1 pkg., 24 oz., frozen cheese-filled ravioli
3 cups shredded chicken (rotisserie chicken works well here)
2 cups shredded mozzarella cheese
1 cup parmesan cheese
Preheat oven to 400°. Spray a 9” x 9” pan with cooking spray. Put 1/4 cup of sauce on the bottom of the dish. Layer with 1/3 of the frozen ravioli, 1 cup of chicken, 1/3 of the remaining sauce, and 1/3 of the cheeses. Repeat layers two more times. You should be left with about a half-jar of Alfredo sauce.
Tightly cover with foil and bake for 1 hour. Uncover and bake 10 more minutes or until bubbly and lightly browned. Let sit 5 minutes before serving.
SUBSTITUTIONS: Sauteed mushrooms and/or spinach (equal to 3 C.) OR 1 pound cooked, ground chicken/turkey for the chicken.
