Just over 10 years ago, a recipe took Pinterest and the internet by storm. That recipe was “Mississippi Pot Roast,” a relatively easy recipe for pot roast with pepperoncini peppers, ranch dressing mix, onion soup mix, and a whole stick of butter.
I have made it numerous times with much success, but the last time I made it, I wanted to do something a little different.
The seasonings stayed the same, I just swapped out the post roast with something a little unfamiliar to most people: Cornish game hens.
These little chickens were full of flavor. With the slow cooker doing the work, I just had to make some potatoes to round out the meal.
Mississippi-Style Cornish Hens
2 Cornish hens
2 tablespoons Cajun seasoning, such as “Slap Ya Mama”
1 packet of ranch dressing mix
1 packet of onion soup mix
4-5 pepperoncini peppers
4 tablespoons butter, cut into ½ tablespoon pats
¼ cup of water
Place hens in a 6-8 quart slow cooker that has been sprayed with cooking spray, tucking the wings underneath. Season hens with Cajun seasoning and salt and pepper. Coat with ranch mix and onion soup mix. Put peppers around hens. Place butter on hens, distributing evenly. Pour in water.
Cover and cook on low for 3 and ½ hours.
